Creamy Berry Dessert: You will need, 1 cup blackberries, 1 cup raspberries, 1 cup vanilla yogurt, 1 tablespoon fresh mint (minced), 2 peaches (pit removed and cut in half), and honey (as desired). Directions: Place the berries in a bowl and drizzle with some honey and toss gently to combine. In a smaller bowl combine the yogurt and the fresh mint and mix well. To serve: Place the peach halves on serving plates, then scoop the berries over the peach halves, reserving a few for garnish. Then top the berries with the yogurt mixture, and garnish each serving with the reserved berries and drizzle a little honey over the top.
Ambrosia Fruit Salad: You will need, 1 cup of orange sections (cut into chunks), 1 cup pineapple (cubed), 1 cup of strawberries (sliced), and shredded raw or toasted coconut (to taste). Directions: In a bowl, toss the first three ingredients together. Reserve the coconut for garnish when serving. To serve: Spoon fruit into two or three serving dishes. This salad is very appealing when served in glass bowls. Garnish fruit with the coconut and serve along with cinnamon flavored pita chips or rice cakes.
Raspberry Pear Parfait: You will need, one and a half cups raspberries, 1 large pear (remove core and dice), 2 cups low-fat vanilla yogurt, and one-half cup mini chocolate chips. To serve: Take two parfait glasses or two wine glasses and place a layer of raspberries on the bottom of each glass, then a layer of yogurt on top of the raspberries then sprinkle on some chocolate chips. Next place a layer of pear pieces in each glass, then yogurt, then chocolate chips. Layer again with the raspberries and continue layering until you have used up the ingredients, finishing with a sprinkling of chocolate chips on top of each parfait.
